Recently I purchased a new cookbook from Barnes and Noble, Big Vegan by Robin Asbell. Yes many recipes are on the internet now and all of the e-readers make having the recipe at our fingertips within a moments notice very appealing. However, there is something so inviting about turning the pages of a beloved cookbook, noting the pages that have been visited over and over by the smudges, dog-ear tags, and binding lines. As I perused the book my insides started to dance and my tongue began salivating. The ingredient marriages alone whispered longingly in my ears. The first night having my new cookbook I tagged all of the chapters for easy reference and the next day I started my cooking journey.
The first recipe I tried was simple, No-Knead Spelt Sandwich Loaf. The bread has a light chewy texture and simple earthy flavor. It has become my families favorite go to bread. This recipe takes 3 days all together to make, but for those of you who are like me and enjoy the convenience and speed of the bread machine, you can have the same yummy goodness within hours.

New to the Vegan Lifestyle
A few months ago my husband and I saw the documentary Fat, Sick, and Nearly Dead. We had been juicing for a few years, but we were re-ignited in our desire to live the most healthy lifestyle possible. A few weeks later we watch Forks over Knives. After this movie we decided to transition our family over to a Vegan lifestyle. This was 3 months ago and we are still in the transitioning phase. I would say that 80-85% of our eating is vegan. Our biggest struggle is cheese. I have tried so many of the nut cheese and have come to realize that I need to just live without it and stop trying to find a substitute!
Our children are doing well for the most part. We have 4 children ranging in age from 8, nearly 9 to 9 months. They too struggle with giving up cheese and will on occasion ask for meat specifically. This is probably the hardest lifestyle change my husband and I have ever experienced, but our family is worth it!!!
